Simple Chicken and Potato Curry

Simple Chicken and Potato Curry

Makes 4 large servings. We were just 2 people but I love freezing food and finding it the next week when I don't feel like cooking!

Ingredients:

* 2 onions
* Three regular potatoes
* 2 chicken breasts
* Tin of tomatoes
* Garlic and ginger
* Spinach
* Extra veg (I used mushrooms and pepper because I needed to use them up)
Curry powder and spices as preferred



Method:

1. Add the chicken potatoes and onions to a large frying pan/ wok and let cool slowly in a large dash of oil. 

2. When they're browning, add a tin or two of tomatoes depending on how saucy you like it. Full an empty tin with water and add that too (allows the chicken to cook slowly without risking burning any of the ingredients. 

3. Add any remaining veg like spinach

4. Add spices and curry powder

5. Put the lid on and leave to simmer slowly
