Berry Pavlova

Berry Pavlova
Ingredients:

For the Meringues:
* 4 egg whites
* 250g caster suagar
* 1 tsp cornflour
* 1 tsp vanilla essence
* 1 tsp white wine vinegar
* pink food colouring

For the topping:
* raspberries
* strawberries
* 1 tsp icing sugar
* 330ml double cream

Method: (meringues)

1. Beat/whisk the egg whites until white and fluffy and makes stiff peaks
2.and 1 tsp of caster sugar at a time to the mixture whilst continuously whisking
3. When all the sugar has been added the mixture should look glossy and not grainy. fold in some food colour.
4. Put onto baking paper (draw around a plate to get the circle shape) making the walls of the circles thiker than the middle
5. Cook in the oven at 130' (fan oven) for 1 hour and then turn the oven off but leave the pavlova in whilst the oven cools down.

Method: (topping)

* chop the strawberries small and mix in with the raspberries add 1tsp icing sugar and leave.
* whip all of the double cream and layer the bottom middle of the pavlova
* put all the fruit on top

Extra Tips:

* can add alcohol to the cream. I added passoa for a bit of a kick
* i added sprinkles to the fruit but you can decorate it any way depending on the event.
